Under The Shade of Olive Trees was published in 2014 by Stewart, Tabori & Chang, an imprint by Abrams, New York, translated from Dutch: Arabia bij je thuis, first published by Kosmos Publishers

It was the first book being translated. Generally it was my and co author Nadia Zerouali’s view on the broad Arab cuisine, tradition and modern versions the fusion mix that is so common now.. Really i think we were a bit ahead of our time back then. Recipes like Salad of roasted cauliflower with preserved lemon lentils and tahina, labneh with rose petals, pomegranate seeds,sumak and anise seeds and roasted beets with pomegranate molasses white cheese candied orange zest with cardamom. The book went from Morocco to Lebanon and Sicily, divided by ingredients.
